Vegetarian (or Vegan) Ragù Pasta

For those of you who know me, you know that I enjoy experimenting with different types of cooking. Lacking Pasta Sauce in the kitchen, I decided to try and make a ragù sauce. Instead of meat, I incorporated TVP (textured vegetable protein), thus making the sauce vegan.

Ingredients:


1 Tomato (Peeled and Diced)*
1 Small Can of Tomato Paste*
1 Cup of v8 Juice* (Substitute this with another form of tomato stock for vegan sauce)
*This is what was in my kitchen at the time, It is likely that I would have used 4-5 tomatos, or a can of diced tomatoes.
1 Cup TVP
1 Table Spoons minced Garlic
1 Table Spoon Dried Basil.
Half Table Spoon Olive Oil

I cooked the TVP as indicated on the package, adding a little v8 to give flavor. While the TVP settled, I started making the rest of the sauce. I sautéed the garlic and the basil in the olive oil and then added the diced tomato. I then sautéed the tomato for about 2 minutes and then added the tomato paste and the vegetable juice. I let this simmer for another 3 minutes before adding the TVP. I added the TVP and then let the whole thing simmer while I made the pasta. The resulting sauce turned out pretty good.
